On the evening of Thursday 25th February, we were part of a showcase of the research being done on all levels of the food chain, from the chemistry of appetite-reducing ingredients to the policies behind tackling food insecurity. To overcome the injustices related to food production and consumption, whether the environmental impacts or excessive dietary standards, we need all levels of society involved. It was thrilling to meet members of the public who already are!
We would like to say thank you to the “Off the Scale” exhibit team, who helped plan and run our contribution to the event: Michaela Dijmarescu & Pauline Scheelbeek (School of Public Health), Malcolm Graham (Grantham Institute & Civil Engineering) and M.A Hoque (Civil Engineering). It is always a pleasure to work with such exciting and motivated researchers.
